Like our original Buffalo Jerky, Spicy Jerky is made from 100% grass-fed American buffalo (bison) that graze the Great Plains. Organic Aji Molido, a distinctive ground red Argentinian chile, gives Spicy Jerky its mellow, subtle heat.

Our Buffalo Jerky comes from the affiliated ranches of Wild Idea Buffalo, which represent more than 50,000 acres of recovering grasslands. Through their light grazing habits, nutrient input and soil-tilling hooves, the free-roaming bison of these ranches are vital to preserving the Great Plains ecosystem. Wild Idea harvests their buffalo in the field and processes them locally, providing jobs for the regional economy. This is a business we’re proud to support.

To add heat to our Buffalo Jerky, we could’ve gone with the industry-standard cayenne. But in our travels we discovered the irresistible tart-sweet flavor and mellow spiciness of Aji Molido, the sun-dried, ground Argentine pepper. So we worked with our friends at Molino Los Cerrillos to create the first certified organic crop. Today, they grow, harvest and dry the organic peppers for us at 8,200 feet above sea level in the Salta region of Argentina. The harsh granite soil and high altitude combine to create the distinctive flavor we fell in love with and are now proud to share with our friends and customers.
